The California Yellowtail is a local favorite. From the Amberjack family and closely related to (and sometimes referred to) as Hamachi or Hiramasa. Yellowtail is extremely versatile and is delicious prepared grilled, baked or raw. It holds up well to a variety of marinades and is famous as sashimi. We source our yellowtail from local rod and reel fishermen who utilize hook and line fishing techniques.
