Diver Harvested “Uni” or Red Sea Urchin is a true culinary delicacy. Prized both in Japan and worldwide for it’s unique rich flavor, we are truly fortunate to have this fishery right in our backyard. Urchins are hand harvested by divers, one by one, which results in no by-catch and creates a highly sustainable fishery. Uni is packed with umami and has a unique buttery flavor that is most suitable for raw applications.
