Japanese Kanpachi, aka Yellowtail, is the crisp, buttery, fish served in many fine dining, Michelin starred restaurants. Our Kanpachi is farmed in Kagoshima Prefecture in an area known as “Sakura-Jima”, with an active volcano that occasionally spews ash into the area, creating a mineral rich environment for all aquatic species. It can be prepared in the same fashions as California Yellowtail
