
The fattiest and desirable part of the Bluefin Tuna is the toro cut. It's the Waygu beef of tuna and has a slightly firm and buttery texture. It's a fantastic choice for sashimi at home or a very light searing on the grill. We only purchase bluefin that are sustainably fished by hook and line.
