Black Cod (also known as Sablefish or Butterfish) is a deep water white fish prized for its rich, buttery flavor and high oil content. It is a very delicate and moist fish with a sweet flavor and almost velvety texture. This fish can be found along the ocean bottom at depths of 650ft and deeper. Black Cod’s high oil content makes it difficult to overcook and this fish lends itself well to broiling, sautéing or baking.
